Today was probably the worst Paleo day I've had yet :( I was so busy I barely had time to eat anything. In fact, as I write this I just sat down on a plane to Colorado and all I've eaten today is a banana and two Kind bars.
Once I get to Colorado things will be better.... But as of right now I'm starving!! Ugh. I just hope these days are few and far between.

Day #12 & #13 -- October 18th & 19th
Still holding steady with my new way of life :) 10 pounds lost so far and I'm happy.
Day#12
For breakfast I had a piece of ham, unsweetend apple sauce and a handful of walnuts -- quick, fast and good!
For lunch I cooked a chicken breast and put slices over a salad -- used a basalmic vinegar dressing and topped with a few walnuts.
For dinner I tried my hand at apple bacon pecan stuffed porkchops. I little time consuming on the prep, but totally worth it!!!! let me know if you need the recipe.
Day #13
For breakfast this morning I ate one of the KIND bars I picked up from whole foods the other day.
For lunch, I had fajitas! We grilled out at work, so I had all the veggies and meat... just no tortilla or cheese. Pretty awesomely satisfying.
For dinner, I had a leftover porkchop.
That is it for today!!

Day #11 - October 17th, 2011
Another quick update for today's food choices:
Breakfast, fail again! Just coffee and a banana. However, acting on a tip from a friend, I have now picked up a few of those KIND bars as a quick breakfast just in case I don't have time to make any. No excuses from here moving forward.
For lunch, I ate a leftover piece of pecan crusted chicken that I prepared the night before -- still good :) -- and a salad.
For dinner, I ate the remaining chicken and another salad. I didn't have a whole lot of time tonight because I needed to go to the grocery store....
As a side note, majorly awesome find at Whole Foods tonight!! Flaxseed crackers :) they are sooooo good. I had a couple with dinner.
Until tomorrow!! :)

Day #9 & #10 - October 15th & 16th, 2011
Crazy couple of days with traveling to Ft Worth so I will try and keep it brief!
Day #9
Breakfast = fail :( just coffee on my drive north to ft worth.
Lunch = I did good! Went to an Italian restaurant and was able to order a salad with chicken.
Dinner = another success! Went to Cheesecake Factory, but was able to pick and choose a couple small plates :) mushroom lettuce wraps and a grilled artichoke. Very good! And for dessert, a bowl of fresh strawberries.



Now - having said all that I must admit a huge cheat of Saturday evening. My friends and I went out to Billy Bob's that night and I definitely partook in several beers and a couple sugary shots. I don't plan on making that a regular occurrence, so I don't feel too awful about it.

Breakfast/Lunch was a bit of a combo meal. We went to the hotel restaurant around 1030 or so and I had a huge omelette - very good. All kinds of veggies, ham and bacon.

I was home by dinner so I cooked myself a pecan crusted chicken breast and had a salad. A good way to end the day!!
All in all, I think I did pretty well for being on the road and not cooking :)

Day #7 & Day #8 - October 13th & 14th, 2011
Sorry about missing the post yesterday. I wasn't slacking off -- just had a busy day :)
Day #7
Yesterday, I rewarded myself after a morning CrossFit workout with scrambled eggs w/ ham. Definitely hit the spot.
For lunch I had leftover broccoli and beef stir fry from the night before.
Dinner was a bit of a challenge because I went out to eat. This was my first test of trying to find something paleo on a menu.... kind of difficult, but I did okay. Most items had some element of non-Paleo in it. However, I settled on the grouper fish tacos w/ cabbage. I didn't eat the tortilla. I also had a side salad w/ chopped walnuts, apples and a vinaigrette.

Today, for breakfast, I was running a little behind and grabbed just a banana. Note to self.... need to prep something the night before or buy something that is quick and I can grab before running off to work.
For lunch, I was presented with another restaurant challenge. I went to one of my favorite restaurants, Beaver's, knowing that I could probably do pretty well with Paleo. I ordered the beef shoulder and resisted the urge to pour on the BBQ sauce and eat the bread... it was awesome, just the same!!!
Tonight, I ate the remainder of the pork loin I made the other night and had a side salad.
This weekend will probably prove to be a challenge... I'm headed to Ft. Worth to see some friends. So, wish me luck!!

Day #6 - October 12th, 2011
Great news today :) I weighed myself and since I have started my Paleo journey I have already lost 7 pounds! So excited. I know some of it might be just a little fluctuation, but I feel like it is a good sign that I am moving in the right direction.
Foodwise, today was pretty simple.
For breakfast I ate a banana and had part of a leftover lamb patty.
For lunch, I brought in left over pork loin from last night :) still good!!
For dinner I made a broccoli and beef stir fry. Pretty decent, although I need to work on the ingredients... maybe add some more spices? Not sure.
Das ist alles!

Day #5 - October 11, 2011
Today was tough! I woke up a little late so I did not get to have a very good breakfast :( but, I was very good and resisted the breakfast tacos that were brought in for my morning meeting at work. I guess it is the little victories... I'm proud of myself for not partaking.
So, for breakfast I had just a banana... because I woke up late, I did not prepare what I meant to.
For lunch, leftover salmon and roasted green beans... much needed and still very good from the night before.
For dinner, I had my BFF Roxanna over for her birthday celebration and I made a pork loin in the crock pot with zucchini accompanied by steamed broccoli! delish :)
And, because I am trying to stay accountable.... I did have a couple glasses of wine. I know this isn't 100% paleo, but I am being honest! Staying away from vino and beer is going to be tough so I will have to make exceptions every once and a while.
Until tomorrow....

Day #4 - October 10th, 2011
Today was my first day back to crossfit after a two week break due to wrist surgery. Needless to say, I got my butt handed to me. Thanks Alex ;)
Foodwise though, I did pretty well.
I had scrambled eggs w/ fresh strawberries and bananas for breakfast:
For lunch I brought a lamb patty (which I prepared last night) and the rest of the strawberries I cut up.
For dinner I baked pecan crusted salmon w/ rosemary, accompanied by roasted green beans. yum!
Soooo... that's it for today folks :)

Day #3 - October 9th, 2011
Another successful day :) just a quick note on today's eats.
Breakfast was the most elaborate meal of the day by far: Sweet potato hash with yellow peppers and onions, accompanied by scrambled eggs with ham, tomatoes, onions, red and orange peppers. Yum!
Lunch was leftover spaghetti squash.
Dinner was rotisserie chicken and leftover asparagus.
Until tomorrow....

Success! :) an entire day of paleo...
For breakfast, a chicken apple hash w/ cinnamon:
The halibut was by far my favorite... but everything else was great too! :)

Day #1 - October 7th, 2011
At the suggestion of a friend in CrossFit, I have been reading a book called The Paleo Solution by Robb Wolf. I'll be honest, I read the first couple of chapters and then skipped a lot of the "science" on why/how the diet works.... I've seen the results in people and I'm already sold! The last few chapters contained the information I really wanted and needed, discussing how to shop and a suggested 30 day meal plan.
I finished the book this morning, set my sights on cleaning out the kitchen (50% complete) and headed to Whole Foods. Not sure if this store was the most economical choice, but I knew that they would have everything that I was looking for. $200 later, I've put together a pretty good spread for the next 7 days (or more).
So, here I am. Day #1... and it started with a delish dinner of Spaghetti Squash w/ ground beef and marinara sauce. YUM!
I finished the book this morning, set my sights on cleaning out the kitchen (50% complete) and headed to Whole Foods. I'm assuming that you know me already if you are reading this, but for the purposes of this blog here are the basics: I'm 29, have a very successful career, make good money, have a wonderful family and great friends and have the most awesome dogs ever!!! All amazing and positive things, right? Of course.
But, I feel unhealthy. I'm the heaviest I've ever been, I rarely cook because I'm "too busy" and I seem to catch every sickness that I'm exposed to.
I started making a lifestyle change about 3 months ago when I was introduced to CrossFit for the first time. I have loved every minute of it. I have now decided to take it to the next level by going Paleo.
